Sweet Potato Toast | How To

If you haven’t heard of Sweet potato toast then, where in the world have you been? The humble sweet potato is giving sliced bread a run for its money and I’m not mad at it. Sweet potato is packed with Vitamin A, Vitamin C, Manganese, Copper, Pantothenic acid and Vitamin B6, providing you with even more goodness per slice. Just like sliced bread you can top your sweet potato toast however you like, think PB & J, sunny side up, honey etc. Bonus Tip: Sweet potato toast is able to carry flavors quite well without an overpowering aroma so feel free to go crazy with your toppings. 

Today, I'm sharing one of my favorite ways to make sweet potato toast and it is everything you want in a summer meal. It’s is topped with creamy tangy avocado lime mash, juicy fresh tomatoes, crunch protein packed chickpeas, and umami from the smoked paprika. It is just so good, and all you need is a toaster or an oven. 

Serves 3

You'll need
1 Medium Sweet Potato 

1 large avocado
1 lime, juiced
100g chickpeas, rinsed and drained
100g tomatoes, quartered
1 small red onion, diced finely  
1 tablespoon of olive oil
1 tablespoon of fresh lemon juice
1/2 teaspoon smoked paprika
1/4 teaspoon coconut sugar (sweetner of your choice)
Sea salt & freshly cracked black pepper

Directions | Oven
Preheat oven to 350℉.
Place a wire rack on a large rimmed baking sheet.
Wash the potato and trim both ends using a sharp knife. 
Slice sweet potato lengthwise into ¼-inch thick slabs and arrange slabs in a single layer on the wire rack.
Bake for 15-20 minutes or until potatoes are cooked through. 

Using A Toaster
Place desired number of sweet potato slices into a toaster or toaster oven. Toast until hot and edges are crispy. The amount of time required will depend on your toaster. 

Mash the avocado with the lime and season to your taste with salt and pepper, then set aside. Combine the rest of the ingredients in a bowl and leave to sit for at least 5 minutes to develop flavor. Top your sweet potato toast with the avocado mash and then cover with the chickpea combo.
