Beetroot & Strawberry Sorbet


Sneaking veggies into sweet things is the oldest trick in the book. It's especially useful when you have kids or picky eaters who are struggling to get their "5 a day". This sorbet recipe is nutritious, refreshing, tangy and just sweet enough making it perfect for a light dessert or breakfast on a hot summer morning.

You'll need:
3 medium beets
2 cups strawberries, frozen
3 tbsp, fresh lime juice
1 tsp, fresh ginger
1/4 cup raw honey
Basil, garnish


  1. Wash and peel the beets and cut into cubes. Place in a high speed blender and add the remaining ingredients, then process till smooth.
  2. Pour the mixture into a freezer-safe container and freeze until slightly firm, about 2 hours or overnight. Allow to thaw for 30minutes to an hour before scooping if you freeze it overnight. Enjoy!
