Chicken Quinoa Patties | 30 Mins meals

Looking for a healthy protein packed dinner? Try my chicken quinoa patties which come together in 30 mins or less. I love to serve this with a fresh salad or steamed greens, they also do well on their own for a substantial snack. It's moist, fragrant, delicous and spicy, the way I like it. This recipe also freezes well, so they are great to meal prep as well.

Time: 30mins
Serves: 3

You'll need:
500g chicken mince
1 egg
3/4 cup quinoa flour | (I ground my Quinoa using a high-speed blender to make flour)
2 cloves garlic, minced
2 teaspoons, fresh parsley or spring onions  
1 teaspoon, chicken seasoning
1/4 teaspoon, ground black pepper
1 lime, juiced
1 teaspoon, sesame oil
1 tablespoon, honey
1/2 teaspoon, chilli (optional)
2 tablespoons olive oil for pan frying OR to oil the sheet pan 

Directions:
Place ground chicken, egg, garlic, parsley, seasoning, black pepper, lime, oil, honey and chilli in a medium bowl and mix to combine. Add the quinoa flour and mix knead mixture together with till evenly combined.

Form mixture into 6 thick patties, you can tap you hand in oil to help with the stickyness.  

In large non-stick skillet, add olive oil and bring to high heat. 

Place the patties in pan and cook on one side for about 3 to 4 minutes. Flip and cook on the other side till browned and cooked through. 

Remove with slotted spoon and and pat with a kitchen towel to remove excess oil.

Serve as you like
