Building a Salad + My fave #Vegan #ProteinPacked Recipe

A salad is the easiest thing you'll ever have for lunch. It's even easier when you prep it before hand in a Jar, the general rule is to have wet on the bottom and dry on top, but I like veggies drenched in dressing, so I always have it at the top. What you add to your salad is a personal preference as its so easily customisable. Using this simple guide, you can create a million and one salads.

DFF Tips?

  1. Wash and Dry leaves completely. You can use ready washed leaves or Invest in a salad spinner for extra crisp dry leaves. 
  2. Mix up the flavours. Spicy, salty, sweet or tangy. Pack as much variety as you can for bolder more delicious salads.

Vegan Salad Recipe
You'll need:
1 cup Spinach
1/2 cup Chickpeas
1/2 cup Adzuki Beans
1 cup Cherry Tomatoes, diced
1/2 cup Blueberries
1/2 cup Yellow Capsicum, chopped

Dressing
3 tablespoons Tahini
1/4 cup fresh Orange Juice
Salt & Pepper

Directions

Add the orange juice to the tahini, then season with salt and pepper to taste. Mix till you get a smooth emulsion then set aside. 

Layer your salad ingredients in a jar or bowl and toss with the dressing to serve.
