Oatmeal Protein Pancakes

Makes 6 pancakes
3 egg whites
1 scoop vanilla protein powder | I use Puori
2 tbsp. oatmeal flour
¼ cup mashed banana
2 tbsp. agave syrup
2 tbsp. cashew milk
1 tsp. baking powder
Pinch of salt, optional
In a clean bowl, whisk the egg whites to soft peaks and then set aside.
In a separate bowl combine the protein powder, oatmeal flour, mashed banana, agave syrup, cashew milk, baking powder and salt.
Mix till thoroughly combined. Add a third of the whipped egg whites to the batter and fold in gently.
Once the batter is loose, fold in the rest of the egg whites, careful not to over mix.
Grease a nonstick skillet with coconut oil or butter and cook spoonfuls of the pancake batter on low to medium heat for 2 mins on each side.
Serve hot with topping of your choice.
