Mixed Berries & Lime Syrup

I've been brainstorming healthy snacks all weekend and I've stumbled on another keeper, a wonderfully sweet and tangy mixed berries and lime syrup. It’s easy to prepare and store for a full week of snacking or delicious breakfasts. I like to serve it with natural yogurt, and a selection of nuts and seeds.

Some of the other snack recipes I swear by are my super easy Kale Chips & Fudgy Energy Balls. 

This syrup is refined sugar free and is easily adjusted to your sweetness. It's also great on a stack of pancakes or with your daily oatmeal.

Serves 6
You'll need:

2 cups frozen mixed berries
2 limes, juice & zest
2 tablespoons coconut sugar

Directions
Add the frozen berries to a medium saucepan and raise the heat to medium high till the berries start to melt and release their liquids. It takes 7-10 minutes.

Allow the berries to reduce for another 5 mins and then add the lime juice and zest and the coconut sugar. Cook for another minute and then transfer to a plastic container and allow to thicken further at room temperature for 10 – 15 minutes. Serve immediately or store in the refrigerator for up to a week.
