No Bake Shashouka

Shashouka is  a dish that has its roots in North Africa. We  eat something similar to it in Nigeria, which we call “Egg stew” the same ingredients but just prepared differently. It's basically eggs cooked in a tomato sauce. It’s so tasty and easy to put together. I was running out of time this morning so I made a no-bake version which is just as good and such a time saver. Genius!

You'll need:

2 tablespoons olive oil
1 large onion, sliced thinly
1 green chili pepper, thinly sliced + more to serve
3 garlic cloves, finely chopped
1 teaspoon cinnamon
1 teaspoon coconut sugar
1 teaspoon chicken seasoning
1 can chopped organic plum tomatoes
Salt, as needed
Black pepper, as needed
1 handful kale, roughly chopped
3 large eggs

Directions:
Heat oil in a large skillet over medium-low heat. Add onion and cook gently until it starts to turn slightly brown, about 15 minutes.

Add garlic and green chilli and cook until tender, 2 minutes. Add in cinnamon, coconut sugar and chicken seasoning and cook for another 2 minutes.

Add in tomatoes and season with salt and pepper; simmer until tomatoes have thickened, about 10 minutes.
While it cooks, crack in your 3 eggs on a large skillet and cook gently for 4 minutes.

Make a well in the tomato sauce and gently place each of the cooked eggs taking care to cover the sides with sauce.

Season with salt and pepper and cooked for another 5minutes.
Sprinkle with some green chilli and sautéed kale. Enjoy.
